My friend, Alison, and I were talking about ideas for sides for dinners because we are often in a rut. Do you experience this too? She found this awesome recipe for Roasted Cauliflower and shared it with me. My family couldn’t get enough! It is in regular rotation now. Roasted Cauliflower 1 Head (about 2 1/4 pounds) cauliflower 3 large garlic cloves, minced 1/4 c. Canola oil 2 T. Lemon juice 1/2 t. Salt 1/4 t. Black pepper 2 T. Parmesan cheese Preheat oven to 450 degrees. Mix all ingredients together except cheese. Spread evenly on jelly roll pan. Roast for 15 minutes. Stir and then roast for about 10 more minutes, until soft. Sprinkle cheese on top. Serve. Source:

Healthy Snack: Roasted Spiced Chickpeas

What are your kids’ favorite snacks these days? One of our current favorites is roasted chickpeas. Have you had them? Do you buy them or make them yourself? My kids and I love this recipe from my good friend and fellow dietitian Kristen Johnson Brogan from On Target Living. Creamy Potato Soup Serves: 6 3 pounds red potatoes, washed and cut into 1-inch pieces ½ sweet onion, chopped 4 cups low-sodium chicken broth 2 garlic cloves, minced 1 t. salt ½ t. ground black pepper 2 T. unsalted butter ½ - ¾ cup lowfat milk Optional toppings: chopped red onion, shredded cheddar cheese, tomatoes, cilantro, sour cream, bacon crumbles Directions: Combine the potatoes, onion, broth, garlic, salt and pepper in the slow cooker. Set the slow cooker to high for 4 hours or low for 7 to 8 hours. Add the butter to the soup and let melt. Every year, my family vacations at the Jersey Shore. Yes, even from the Midwest, we trek over to the East coast because my parents grew up outside of Philadelphia. For a week, we rent a house and continue a family tradition which has lasted over 40 years.
