Have you tried figs? What are your favorite fig recipes? I have to admit that I haven’t had figs very often but when I saw the Fig-Pecan Energy Bites recipe in The 30-Minute Mediterranean Diet Cookbook (thanks to my in-laws for the Christmas gift!), I knew this would be a good recipe to try! My almost 5 yo son helped me prep these while his sister napped and he was so proud of his snack We may be making more this weekend since it’s supposed to be so cold!
Fig-Pecan Energy Bites
3/4 c. Diced dried figs
1/2 c. Chopped pecans
1/4 c. Rolled oats (old fashioned or quick)
2 T. Ground flaxseed or wheat germ
2 T. Powdered or regular peanut butter
2 T. Honey
Makes 12 energy bites.
Refrigerate all the ingredients but honey in the fridge for 15 minutes before starting.
In a bowl, mix together everything but the honey. Drizzle with the honey and mix everything together again. A wooden spoon works well.
Divide the dough evenly in to four sections. Dampen your hands with water. Use your hands to form balls.
Enjoy immediately or chill in the freezer for 5 minutes to firm. Store in the fridge for up to one week.
