Healthy Snack: Roasted Spiced Chickpeas


What are your kids’ favorite snacks these days? One of our current favorites is roasted chickpeas. Have you had them? Do you buy them or make them yourself?

My kids and I love this recipe from my good friend and fellow dietitian Kristen Johnson Brogan from On Target Living. And it is a great recipe to get the kids in the kitchen to help as they can measure and stir the spices and/or pat the chickpeas dry. The spices in this add a nice smokey flavor too. Cumin is one of my all-time favorite spices so I always add a little extra!

Roasted Spiced Chickpeas (Serves 4) 2 cans chickpeas 1 T. Olive oil 1 t. Cumin 1 t. Chili powder 1/4 t. Cayenne pepper (optional) 1/2 t. Sea salt Drain and rinse chickpeas and pat dry with a paper towel. Mix with olive oil and spices. Spread on parchment lined baking sheet and bake at 350 degrees for 45-50 minutes stirring frequently. They will become dry and crunchy. Watch carefully so they don’t burn. Enjoy as a snack or top on salads. . Nutritional benefits of chickpeas: protein, fiber, magnesium and iron.
