Our New Favorite Veggie Side: Roasted Cauliflower

My friend, Alison, and I were talking about ideas for sides for dinners because we are often in a rut. Do you experience this too? She found this awesome recipe for Roasted Cauliflower and shared it with me. My family couldn’t get enough! It is in regular rotation now.

Roasted Cauliflower 1 Head (about 2 1/4 pounds) cauliflower 3 large garlic cloves, minced 1/4 c. Canola oil 2 T. Lemon juice 1/2 t. Salt 1/4 t. Black pepper 2 T. Parmesan cheese Preheat oven to 450 degrees. Mix all ingredients together except cheese. Spread evenly on jelly roll pan. Roast for 15 minutes. Stir and then roast for about 10 more minutes, until soft. Sprinkle cheese on top. Serve. Source:
